Betty's Fresh Fruit Pizza Dessert Recipe



In this video, Betty demonstrates how to make a lovely dessert pizza. It has a large chocolate chip cookie crust, a spread that is cream cheese frosting, and toppings of fresh strawberries, pineapple, kiwi fruit, and red seedless grapes. It makes a dramatic appearance and tastes luscious! Ingredients: 16.5 oz. roll of refrigerated chocolate chip cookie dough 1 stick butter or margarine, softened to room temperature 8 oz. package cream cheese, softened to room temperature 1 teaspoon vanilla extract 16 oz. box confectioner's sugar 1/2 quart fresh strawberries, washed, dried, and halved 1/2 fresh pineapple, peeled, cored, and cubed 1 kiwi fruit, peeled, halved, and sliced 1/2 cup red seedless grapes, washed, dried, and halved (You may use whole blueberries.) Heat oven to 400 degrees. Cut the cookie dough into slices, about 3/8-inch thick. Place them in a circle on an ovenproof pizza dish or on a cookie sheet. Fill the circles all the way in to the center of the pizza dish. Now, use your hands to press the cookie dough evenly over the bottom of the pizza dish. Leave a little space around the outer edge, and smooth it up a bit. Place the large cookie in the oven, and bake for 10 to 14 minutes, until light golden brown, and done throughout. Let the large cookie cool to room temperature. In this video, Betty demonstrates how to make her Sauteed Chicken Kebab Vegetables/Fruits recipe. If you make Betty's Brown Sugar-Soy Sauce Marinated Chicken Kebabs, you will likely have leftover vegetables and fruits. You can use your reserved marinade and saute the leftover vegetables/fruits in the marinade and have a colorful, dramatic, delicious accompaniment for your kebabs! (Note: This dish can be made just of the marinade and vegetables/fruits--without the kebabs, if you choose. It's an easy, dramatic, and healthy side dish!) Ingredients: 1/3 of the marinade made in Betty's Brown Sugar-Soy Sauce Marinated Chicken Kebabs Recipe leftover red bell pepper chunks leftover pineapple chunks leftover portabella mushrooms When you refrigerate your marinated chicken and vegetables/fruits, pour the remaining 1/3 of the marinade over any vegetables and/or fruits that you have leftover from making your chicken kebabs, and let them soak up the flavor of the marinade. When the chicken kebabs are about ready to come off the grill, pour your marinated leftover vegetables into a heated deep skillet. Stir and fry the mixture for about 5 minutes or so, until the vegetables/fruits are to your taste. Remove them to the serving platter with your chicken kebabs and white rice. It's healthy and tastes great!!!

Betty's Fanciful Fruit Kebabs Recipe



In this video, Betty demonstrates how to make her Fanciful Fruit Kebabs. This is a way to serve fruit that is gorgeous and appealing. Just select the types of fresh fruit that you like and place them on skewers--It's great for a buffet or party! Ingredients: About 3 different fresh fruits that can be cut into approximately equally-sized shapes, but are contrasting in color and flavor (I used cantaloupe, pineapple, and strawberries.) bamboo (or metal) skewers Wash and prepare your fresh fruit pieces in sizes that are about 3/4-inch cubes. Pierce fruit with bamboo skewer, and slide the fruit to the bottom of the skewer. Continue adding fruit, altenating types of fruit, consistently, until the skewer is as full as you want. Adjust the fruit pieces on the skewer, if needed. Place all completed fruit skewers on a serving plate, and serve with fruit dip. In this video, Betty demonstrates how to make a refreshing and healthy Fruit Smoothie. A real energizer--great for summer or anytime! I like to have one right before a hard workout! Ingredients 1/2 cup fresh strawberry halves, washed and capped 1/2 cup fresh pineapple chunks 1 sliced banana 1/3 cup Splenda (or sugar or other artificial sweetener) 1/2 cup skim milk (You may use regular or 2% milk.) Place 1/2 cup halved strawberries, 1/2 cup pineapple chunks, 1 sliced banana, 1/3 cup Splenda or sugar, and 1/2 cup milk in a blender. Set to "blend" or "puree" and turn the blender on for 20 or 30 seconds, or until the mixture is smooth. Pour your Fruit Smoothie from the blender into an appropriately-sized glass. Spoon or drink your smoothie immediately! Yummy and healthy!!! (Note: You may change the fruits to different fruits--and you may use just 1 or 2 fruits, or even more than 3, if you prefer. You may add more or less milk, depending on how thick you like your smoothie. This is just a good place to start!)


Betty's Friendship Fruit Dip Recipe



In this video, Betty demonstrates how to make a light and luscious Friendship Fruit Dip. This recipe was given to me by Lynn, a great friend I met on YouTube about a year ago. She has shared several wonderful recipes with me, and I want to pass this one along to all of you. Its beautiful and tastes wonderful! Ingredients: 8-oz. cream cheese, softened to room temperature (You may use the fat-free type.) ½ cup confectioners sugar 1 teaspoon lemon juice 4-oz. whipped topping (You may use a fat-free or sugar-free type.) In a large mixing bowl, beat 8-oz. cream cheese with an electric mixer until fluffy. Add ½ cup confectioners sugar and 1 teaspoon lemon juice, and beat again with an electric mixer until fluffy. Now, carefully fold in 4-oz. whipped topping. Cover and chill until ready to use. (The dip is ready to use immediately, also.) Serve with fresh fruit. I demonstrated the serving of this dip with fresh pineapple and blueberries. Some other appropriate fruits are strawberries, cantaloupe, honeydew melon, watermelon, peaches, pears, apples, oranges, cherries, bananas, kiwi fruit, grapes—just about any fruit that you like! You can place the dip in a serving bowl and let guests spoon the amount they need onto their serving plate, if you like. This is a treat that you can arrange in such a way that the colors of the fruit and the combination of the flavors is just gorgeous! Enjoy!!! --Betty 

Betty's Cherry Pie Fruit Pizza Recipe



In this video, Betty demonstrates how to make Cherry Pie Fruit Pizza. A chocolate chip cookie crust is layered with a sweetened cream cheese sauce, cherry pie filling, crushed pineapple, bananas, kiwi fruit, and mandarin oranges. It makes a lovely dessert, and it is a great compromise between a sugary, fatty dessert, as opposed to one that has some nice, colorful fruits in addition to the sweet crust. Ingredients: 1 roll chocolate chip cookie dough, softened (You may use a roll of sugar cookie dough or homemade cookie dough.) 8-oz. package cream cheese, softened to room temperature ½ cup sugar 1 teaspoon vanilla extract 1 can cherry pie filling (You may use strawberry pie filling.) 8 ½-oz. can crushed pineapple, drained 2 or 3 bananas, sliced 3 or 4 kiwi fruit, peeled and sliced into half-slices 1 small can mandarin oranges, drained cooking oil spray Spray bottom of a pizza-sized pan with cooking oil spray. Place softened cookie dough in pan, and press it into an even circle. Bake, according to cookie package directions. Cool. Cream together 8-oz. cream cheese, ½ cup sugar, and 1 teaspoon vanilla extract. Smooth on top of cooled cookie dough. Top with cherry pie filling, being careful not to add so much of the liquid part that it would seep down into the crust and make it soft. Next, spread drained, crushed pineapple over the top of the cherry pie filling. Evenly place slices from 2 or 3 bananas on top of the crushed pineapple. Now, place half-slices from 3 or 4 kiwi ...
