UPDATE: I can't find knödel in Florida so far. Gnocchi works just as well. It's an Italian potato dumpling and tastes the same. I was also going to try Matzo Balls, which look like knödel, except made from wheat. My sister reminded me to use a bay leaf or two while simmering the meat. Recipes From the Pantry - Blueberry German Pancake



Recipe from Roxy (roxyfur) 2 1/2 cups flour 2 teas. baking powder 1 teas. baking soda 2 teas. ground cinnamon 2 Tbls. granulated sugar (optional) 2 2/3 cups buttermilk 1 teas. vanilla extract 2 Tbls. vegetable oil 2 eggs 3/4 cup fresh or frozen blueberries 3/4 cup brown suga 1 Tbls. ground cinnamon Preheat oven to 350; spray a 13x9 baking dish with cooking spray. In bowl combine first 5 dry ingredients; add buttermilk, vanilla, oil & eggs; stir until well blended with no lumps. (Mix should run off a spoon in a consistent stream but not drip. Add more buttermilk if too thick). Stir in blueberries; pour into baking dish; top with brown sugar and cinnamon. Bake 35 min. or until pick inserted in center comes out clean. Serve hot, with butter and warm maple syrup; serves 12


German Food: Easy Geschnetzeltes



Chef Uwe Rudnick makes an a quick and easy version of one of Germany's most popular dishes, Geschnetzeltes, (tender meat in a creamy mushroom sauce) using products available at www.GermanDeli.com Recipe Use Maggi or Knorr brand Geschnetzeltes. For each package use about 1/2 pound meat (Pork, chicken breast, or turkey breast). Slice the meat into thin strips and set on a dish. On a clean cutting board slice about 1/4 cup sliced fresh mushroom (button, crimini, baby portabellas, etc.). Heat a skillet and add 1/4-inch oil (sunflower oil or similar). Add the meat strips (chicken, turkey, or pork). Sauté the meat until lightly browned. (Cook through, but don't overcook the meat.) Remove the meat from the pan and set aside. To the pan drippings add the sliced mushrooms. Sauté the mushrooms until tender. Add about 1 cup to 1 1/2 cups of water to the pan with the mushrooms. Add the contents of one package of Fix (Maggi or Knorr). Stir until the sauce is thick enough to coat the back of a spoon. Add the cooked meat to the mushroom/sauce mixture. Cook very briefly. Serve with mashed potatoes, Spätzle, noodles, or rice. Add a fresh garden salad and/or your favorite vegetable. German Food: Easy Frikadellen (German Hamburgers)



Chef Uwe Rudnick makes a favorite dish from his hometown of Hamburg, German Hamburgers (Frikadellen) using Knorr or Maggi Hackbraten Fix available at www.GermanDeli.com Recipe Each package makes about 4 large Frikadellen (German hamburgers). For each package use 1 pound of ground meat. You may use ground beef, pork, chicken, turkey or even a combination of two or more different meats. Add the contents of a packet of Fix to 1/2 cup water. Stir until combined and add to the ground meat. Using your hands work the mixture into the meat. Form 4 patties. Heat a skillet and add about 1/4 inch oil (Sunflower or similar). Add the patties to the hot oil and brown on both sides. Make certain the meat is cooked thoroughly. You may brown the patties and finish them off in the oven if you'd like. Optional preparation: Use the mixture to make a great German-style meatloaf. Just form into a loaf in an oven-safe dish. Bake in a 350°F oven for about 45 minutes or until cooked through. (A meat thermometer should read 160°F at the center of the meatloaf.) Serve with German fries, buttered noodles, or buttered Spätzle. Add a fresh salad. Izzy's Traditional Jewish Recipes



Izzy originally from Poland, is an amazing person who spent from age 18 to 24 in German concentration camps doing slave labor, including Auschwitz. Never having had more then a 7th grade education he was liberated in 1945 with nothing more then the clothes he was given, yet he stayed in Germany and became a millionaire there while still in his thirties. In 1964 he came to the US and continued doing business here. Now at 85 he is retired doing the snowbird thing and doing his favorite thing, cooking. Everybody who has tasted his food raves about it, and everyone who knows him thinks he is a real character.
