Betty's Herb Butter Recipe



In this video, Betty demonstrates how to make a lovely and tasty Herb Butter. You can use it on fresh bread, or bread that is hot out of the oven, or on toasted bread. You can also spread it on French Bread, Italian Bread, and other specialty breads, and heat it in the oven. It is showy and delicious! Ingredients: ½ cup butter, softened to room temperature (Note: the herbs listed below are fresh herbs. You may substitute dry herbs in place of them, but use only 1/3 as much of the dried herbs.) ½ to 1 tablespoon curly parsley, minced (You may use flat Italian parsley, if you prefer.) ½ to 1 tablespoon chives, minced ¼ to ½ tablespoon fresh rosemary, minced In a small mixing bowl, mix ½ cup softened butter with the desired amount of parsley, chives, and rosemary. Mix until the herbs are evenly distributed throughout the butter. Place herb butter in a pretty serving bowl and chill. Remove your herb butter from the refrigerator and soften before serving with bread. You may spread it on a baked loaf of bread that has been cut lengthwise and place it in a 350 degree oven for 10 minutes. It will be crispy and gorgeous on top, but soft inside. You may also slice your loaf of bread and place the slices in a 350 degree oven for 10 minutes, and then spread individual pieces with herb butter, as desired. Either way, it is a real treat, and looks very nice with a special meal! I hope you enjoy it! --Betty 

Betty's Herb Drying, Part I --NO RECIPE--



In this video, Betty clips bunches of herbs from her herb garden to dry over the winter. This must be done before a killing frost comes along (which, for us, is predicted this weekend). The freshest, most newly grown herbs are harvested, and then brought to the kitchen for processing. I rinse the herbs thoroughly and pat them dry with paper toweling. It is best to let them dry for a few hours on paper towels, until they are completely dry. Then, take some string and tie each clump in sequence, leaving extra string at the ends for hanging. If desired, cover each clump or herbs with a brown paper bag, held in place with a rubber band, to protect from dust, etc. Find a cool, dry place that is well-ventilated to hang them in an arc (or straight). After the herbs have had time to dry completely (until they are brittle), you can remove them from their drying place and process each individual herb with a mortar and pestle and store it in a glass jar or airtight plastic bag. Herb Pull Apart Rolls Recipe



Pull apart rolls are really fun to put together but they're even more fun to pull apart! Make them apart of your table this year. Ingredients 1 packet of active dry yeast 1 cup of warm water 1/4 cup of melted butter 2 cups of flour 2 tbsp of sugar 1 1/2 tsp of salt 1/4 tsp of thyme 1/4 tsp of oregano 1/4 tsp of dill Instructions 1. Combine yeast, warm water and sugar in a mixer bowl. 2. When bubbles start to form around the edges of the bowl, add melted butter, flour, sugar, salt, thyme, oregano and dill. 3. Attach the dough hook to the mixer and turn to speed 2. Mix for 1 minute or until everything is well blended. 4. Continue to mix at speed 2 and add flour in 1/2 cup increments for about 2 minutes, or until the dough is smooth and elastic. 5. Place the dough in a bowl and cover it. Place the bowl in a warm place and let it rise for about an hour or until it doubles in size. 6. Now punch the dough down. 7. Flour your work surface and rolling pin, and roll the dough into a small disk. 8. Divide the dough into 6 equal pieces and divide each piece again into 6 equal pieces and roll those pieces into 36 small balls. 9. Put three balls into each greased muffin pan, cover and let rise in a warm place for about 45 minutes or until it doubles in size. 10. Preheat the oven to 400 F. 11. Stir in lemon juice, olive oil and oregano. While the dressing is marinating, chop the mushrooms and lightly sauté in a little olive oil. Do not overcook; they should be just a couple of minutes in the pan. Throw salad greens into a large salad bowl. Add the cooked mushrooms and about a dozen olives. In this video, Betty demonstrates how to make a long-standing favorite in her family, Herbed-Seasoned Chicken Crunch. Made of chicken tenders, with a hint of mushroom flavor and herbed-seasoned dressing for coating, it's a real winner! Ingredients: 2 pounds fresh, uncooked chicken breast tenderloins (You may use half chicken breasts or nuggets.) meat tenderizer (no MSG), to taste freshly ground black pepper, to taste 14.75 oz. can condensed cream of mushroom soup 3/4 cup milk 1 tablespoon finely chopped onion 2 cups cornbread-style stuffing mix, crushed (I used plain cornbread-style; you may use plain or herb-seasoned-flavor.) 1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley) 1 1/2 tablespoons chopped fresh sage (or 1 1/2 teaspoons dried sage) 1/4 teaspoon paprika 2 tablespoons butter or margarine, melted coking oil spray Place 2 pounds washed, fresh chicken breast tenderloins in a medium-sized bowl. Sprinkle with meat tenderizer, to taste. Grind some fresh black pepper over the chicken, to taste. Use your hands to mix the chicken and seasoning, and then set aside. In a small bowl, mix 1/3 cup condensed cream of mushroom soup, 1/4 cup milk, and 1 tablespoon chopped onion. Stir well, and set aside. Place 2 cups of stuffing mix in a gallon-sized plastic zip-lock bag. Use a rolling pin to crush the crumbs very finely. Add 1 tablespoon fresh chopped parsley, 1 1/2 tablespoons fresh chopped sage, and 1/4 teaspoon paprika to the bag. Close the bag and shake to ...

Nanakusagayu is the seven-herb rice porridge that we eat in the morning of January 7th to bring longevity and health. Below are the nanakusa (seven herbs): - Seri (water dropwort, Oenanthe javanica) - Nazuna (shepherd's purse) - Gogyō (cudweed, gnaphalium affine) - Hakobera (chickweed, stellaria media) - Hotokenoza (nipplewort, lapsana apogonoides) - Suzuna (turnip) - Suzushiro (Daikon) Of course you can only use daikon radish or whatever ingredients you like to cook this porridge! Good for your stomach after a big meal ;) --------------------------------- Nanakusagayu (Seven-Herb Rice Porridge) Difficulty: Very Easy Time: 10min Number of servings: 2 Ingredients: 70g Nanakusa (seven herbs) 250g (8.8oz.) cooked white rice (Japanese short-grain rice) 500cc water a pinch of salt Directions: 1. Wash Nanakusa. 2. Lightly boil Nanakusa, cut roots, and chop. 3. Lightly wash the cooked white rice if you don't prefer gooey texture. Don't wash if you like thick porridge. 4. Bring the water to a boil and add the rice. 5. Add Nanakusa, lightly season with salt, and serve! Add toasted mochi if you like! Food Storage: Herb Suffing Mix Chicken Caserole Recipe



There is a part in the middle where I messed up editing look for it and laugh at me!!! Here is a great recipe using the Herb Stuffing Mix from the Make a Mix Books!!! Herb Stuffing Mix: 30 Slices of bread cubed 1/3 Cup Oil 3 Tbs Dried Minced Onion 3 Tbs Dried Parsley 2 tsp Garlic Salt 3/4 Tsp Ground Sage 1/2 tsp pepper Preheat oven 300 degrees toast bread in oven in two 13x9 pans or one larger one turning ocasionally for even browning. Remove from oven cool slightly. Blend remaining ingredients and toss with bread cubes. Store in tight container in cool dry place. Magic Mix: 1 1/4 Cups Dry Powdered Milk 1/2 Cup Flour 1/2 Cup butter or margarine room temp. Blend ingredients until crumbly and mixed well. This recipe uses half of the stuffing mix 2 PINT(not quart) jars of chicken Instant mashed potatos I made 8 serving size 4 cups of the magic mix sauce

Betty's Herb Mayonnaise Recipe + Herb Garden Update



In this video, Betty shows an update of the herb garden. You will see that most of the herbs, tomato plants, and pepper plants are doing well. I picked five fresh herbs to make a lovely Herb Mayonnaise, which is below: Ingredients (Note: You may use dried herbs in place of the fresh herbs—just use 1/3 as much): 1 cup mayonnaise 1 tablespoon finely chopped fresh parsley 1 tablespoon finely chopped fresh chives ½ tablespoon finely chopped fresh basil ½ tablespoon finely chopped fresh dill ½ tablespoon finely chopped fresh oregano Stir together all ingredients in a small bowl. Refrigerate until ready to serve. You may use herb mayonnaise as a sandwich spread, or use it in the place of regular mayonnaise in potato salad, etc. It perks up the taste quite a lot!
