Betty's Dreamy Date Nut Bread Recipe



In this video, Betty demonstrates how to make her tasty and filling Date Nut Bread. This bread can be used for breakfast or for an afternoon snack with tea. It is very easy to make, and it tastes wonderful! Ingredients: 1 cup chopped dates 1 cup boiling water 1 teaspoon baking soda 2 eggs, well beaten 1 cup sugar 1 tablespoon butter, softened 1 cup walnuts (You may substitute another kind of nut.) 1 ½ cups self-rising flour 1 teaspoon vanilla extract Sprinkle 1 cup dates with 1 teaspoon baking soda, and pour 1 cup boiling water over all. Set aside. In a large mixing bowl, beat 2 eggs, and add 1 cup sugar and 1 tablespoon softened butter. Mix well. Gradually stir in 1 cup walnuts, 1 ½ cups flour, 1 teaspoon vanilla extract, and date mixture. Stir, just until dry ingredients are moistened. Pour mixture into a greased and floured, waxed-paper-lined loaf pan. Bake in a 350 degree oven for 40 to 45 minutes, or until a toothpick inserted in the deepest part comes out clean. (I always bake any loaf like this in the center of the oven with a large sheet of aluminum foil on the rack above, so that the top will not over-brown. The aluminum foil may be removed near the end of baking.) Remove loaf from the oven, and let cool in the loaf pan for a few minutes. Remove from the loaf pan, and peel off the waxed paper. Betty's Crispy, Sugary Nuts Recipe



In this video, Betty demonstrates how to make her Sugary Nut Blend, sometimes called "Swedish Nuts." These are as sweet as candy, but a little salty, too! They are a little healthier than candy, but just as satisfying, and even more filling! Ingredients; 1/2 cup butter, melted (1 stick) 2 raw egg whites dash of salt 1 cup sugar 1 cup roasted almonds 1 cup English walnuts 1 cup pecan halves Pour the melted butter into the bottom of a 13 by 9 by 2 inch Pyrex dish, and spread it to cover the bottom. Now, place 2 egg whites in a large mixing bowl, and, with an electric mixer, beat your egg whites until stiff. Add a dash of salt and 1 cup of sugar, and continue beating the egg white mixture until very stiff and shiny. Fold in 1 cup roasted almonds, 1 cup English walnut halves, and 1 cup pecan halves. Mix gently and completely. Spoon the mixture into the melted butter in the Pyrex dish. Smooth it out until it is even. Place in an oven that has been preheated to 325 degrees for 30 minutes. Stir the mixture every 10 minutes. After 30 minutes, the nuts should have absorbed all the butter and sugar mixture, and they should be brown and crisp. Remove them from the oven and let sit until they reach room temperature. If serving as a party dish, place all of the nuts in a nice, appropriate candy dish. Banana Nut Cake Recipe with Walnuts Pecans and Cream Cheese Frosting Ingredients: Cake: 3/4 cup butter 2 1/8 cups white sugar 3 eggs 2 teaspoons vanilla extract 3 cups all-purpose flour 1 1/2 teaspoons baking soda 1/4 teaspoon salt 1 1/2 cups buttermilk 2 teaspoons lemon juice 1 1/2 cups mashed bananas 1 cup each walnuts and pecan pieces Frosting: 1/2 cup butter, softened 1 (8 ounce) package cream cheese, softened 3 1/2 cups powdered sugar 1 teaspoon vanilla extract Preparation: 1. Grease and flour a 9x13 inch pan. 2. In a small bowl, mix mashed bananas with lemon juice, set aside. In a medium bowl, mix flour, baking soda and salt. Set aside. 3. In a mixer, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in 2 teaspoons vanilla. Beat in the flour mixture alternately with the buttermilk. Stir in banana mixture and walnuts. Pour batter into coated and floured pan. Sprinkle with 1/2 cup pecan pieces. 4. Bake for 50 minutes at 325 degrees 5. Remove from oven and place directly into freezer for 45 minutes on cooling rack. This will make the cake very moist. 6. For the frosting: In a large bowl, cream 1/2 cup butter and cream cheese until smooth. Beat in 1 teaspoon vanilla. Add powdered sugar and beat on low speed until combined, then on high until frosting is smooth. Spread on cooled cake and add the other 1/2 cup pecan pieces.

In this video, Betty demonstrates her version of Chocolate Cobbler with Caramel Sauce and Macadamia Nuts. This is an imitation of the dessert Rick and I had at our Valentine's dinner at Murray's Restaurant in Lexington, Kentucky on February 14. It is a moist, dark brownie, baked in the oven, and served warm with caramel sauce and slightly chopped macadamia nuts. Yum! Ingredients: 3 eggs, well-beaten 1 1/2 cups sugar 1/3 cup flour (this may be all-purpose or self-rising.) 1/3 cup cocoa 3/4 cup butter, melted 1/2 teaspoon vanilla extract cooking oil spray jar of caramel sauce macadamia nuts, slightly chopped In a large bowl, combine 3 well-beaten eggs, 1 1/2 cups sugar, 1/3 cup flour, 1/3 cup cocoa, 3/4 cup melted butter, and 1/2 teaspoon vanilla. Stir well, until completely blended. Pour into a deep dish pie plate that has been sprayed with cooking oil spray. Bake for about 25 minutes, until set. You can check for doneness by inserting a clean toothpick in the center, and it will come out clean when the chocolate cobbler is done. Remove cobbler from oven, and let it cool at bit before serving. Meanwhile, heat caramel sauce in a small saucepan until very warm. Chop macadamia nuts slightly. (I used an electric kitchen chopper for this.) Serve the chocolate cobble while warm. Spoon out a generous amout of chocolate cobbler in a nice serving bowl or plate. In this video, Betty demonstrates a viewer request, Betty's Banana Nut Bread with Lemon Sugar Glaze. It's great as a sweet treat for breakfast, but elegant enough for a dessert at dinnertime! Ingredients: 1/2 cup peanut oil (You may use olive oil, corn oil, Wesson oil, etc.) 1 cup sugar 2 well beaten eggs 3 ripe bananas, mashed 3 tablespoons milk 1/2 teaspoon vanilla extract 2 cups self-rising flour 1/2 cup chopped pecans cooking oil spray Blend 1/2 cup oil and 1 cup sugar together. Add 2 well-beaten eggs and 3 mashed ripe bananas. Beat well. Add 3 tablespoons milk and 1/2 teaspoon vanilla. Stir. Add 2 cups self-rising flour, and blend until completely combined. Stir in 1/2 cup chopped pecans. Pour mixture into a 9-inch by 5-inch loaf pan that has been sprayed with cooking oil. Bake for about 45 minutes in an oven that has been preheated to 350 degrees. The banana bread will be done when a toothpick inserted into the middle of the bread comes out clean. Cool to room temperature, remove from loaf pan, and place on a serving plate. Top with icing or glaze, if desired. I used a Lemon Sugar Glaze, which is below: Lemon Sugar Glaze: 1 cup confectioner's sugar 1 tablespoon lemon juice (You may use fresh or bottled lemon juice.) Mix the confectioner's sugar and lemon juice together in a small bowl. If it seems too thick to spread on the banana bread, add more lemon juice. If is seems thin, add more confectioner's sugar.
