In this video, Betty demonstrates how to make Spicy Southwestern Black Beans and Rice. This recipe contains white rice cooked in beef broth and mixed with black beans and sautéed green peppers, onions, garlic, chili powder, and cumin. It gives a flavorful Tex-Mex twist to black beans and rice. Ingredients: (2) 10 ¾-oz. soup cans of beef broth (1) 10 ¾-oz soup can long grain white rice 1/2 stick butter 1 tablespoon extra virgin olive oil ½ cup chopped onion ½ cup chopped green bell pepper 2 cloves garlic, chopped 14-oz. can black beans, undrained Place (2) 10 ¾-oz. soup cans of beef broth in a medium-sized saucepan that has a lid that fits. Add (1) 10 ¾ -oz. soup can long grain white rice and 1/2 stick butter. Bring to a boil over medium heat. Cover, reduce heat to low, and cook 14 minutes, or until broth is absorbed by rice. Meanwhile, place 1 tablespoon olive oil in a deep skillet and add ½ cup chopped onion, ½ cup chopped green pepper, and 2 cloves chopped garlic. Stir together, and place over low heat. Saute until vegetables are soft, stirring occasionally. Add 1 teaspoon chili powder and ½ teaspoon cumin, and stir well. Continue to cook for 3 to 5 minutes to get the flavors combined. Remove from heat. When rice is done, add rice to sautéed mixture, and then add a 14-oz. can of undrained black beans to the skillet. Stir to combine. This is an excellent authentic Mexican rice recipe that I make as a side dish with all of my Mexican dishes. If you use tomato sauce then don't forget to add mexican spices, salt and specially cumin powder. I had ready mexican suaces, so didn't use much spices since sauce contains spices already.


Betty's Savory Cilantro Rice Recipe



In this video, Betty demonstrates how to make a bowl of Savory Cilantro Rice. This rice is cooked on the top of the stove, and is flavored with onion, jalapeno peppers, garlic, chicken broth, green chiles...and fresh cilantro! Ingredients: 2 tablespoons extra virgin olive oil 1 small onion, chopped 1 jalapeno pepper, seeded and finely chopped 2 cloves garlic, chopped 2 cups white rice (I used jasmine rice; you may use any regular uncooked rice—not instant.) 14.5-oz. can chicken broth 14.5-oz. can water 4-oz. can diced green chiles ½ teaspoon salt ¾ cup lightly packed chopped fresh cilantro In a large deep saucepan, heat 2 tablespoons olive oil over medium high heat. Add 1 small chopped onion and cook, stirring constantly, for 2 minutes. Add 1 finely chopped jalapeno pepper and 2 cloves chopped garlic, and cook for about 2 minutes, stirring constantly, until onion is soft and clear. Add 2 cups white rice and cook, stirring constantly, for about 2 minutes, until rice is lightly toasted and translucent. Add a 14.5-oz. can chicken broth and a 14.5-oz. can of water. Bring to a boil and stir in 4 oz. diced green chiles and ½ teaspoon salt. Cover, reduce heat to low, and cook about 17 minutes, or until liquid is absorbed and rice is tender. Stir in ¾ cup chopped fresh cilantro just before serving. Ladle into a nice serving bowl and serve immediately. Once you have pre-prepared the chicken cubes and rice, all you have to do is sauté some onion, green peppers, green peas, and carrots, scramble a couple of eggs, add a generous amount of soy sauce, and serve! Ingredients: 2 cups uncooked long grain white rice 4 cups water 1 teaspoon salt 1 teaspoon vegetable oil (for cooking the rice—I used peanut oil.) 1 or 2 uncooked chicken breasts (enough to get 1 cup cubed chicken. I used 3 chicken breasts, because I happened to have that many left in a large bag, and we can always use leftover chicken! If you already have leftover cooked chicken, that will be fine! In this video, Betty demonstrates how to make Curried Rice to accompany Baked Coconut Shrimp with Jamaican Jerk Seasoning. This rice is made by cooking rice in butter until it is golden, and then adding curry powder, chicken broth, and salt, and cooking on the stove top until done. Ingredients: 1 ¼ cups rice (I used long grain white rice, but you may use any type of rice.) 4 ½ tablespoons butter, melted 1 teaspoon curry powder 1 ½ teaspoons (1/2 tablespoon) salt 2 ¼ cups chicken broth In a medium-sized pot, stir together 1 ¼ cups rice and 4 ½ tablespoons melted butter. Place over medium heat and cook while stirring, until the rice is a golden color. Add 1 teaspoon curry powder, 1 ½ teaspoons salt, and 2 ¼ cups chicken broth. Bring to a boil over medium heat. In this video, Betty demonstrates how to make a zesty dish from the Deep South, Cajun Red Beans and Rice. This recipe makes a large amount, and it can be used as the main course of a meal. It is composed of a sauce made from red beans, vegetables, and spices, and it is served over a hot bed of white rice. Add a wedge of hot, tasty cornbread, and it tastes wonderful!
