Making your own bread cubes is easy and yields delicious results. You can prepare the toasted bread cubes two to three days before Thanksgiving; store at room temperature in a zip-top plastic bag. If there's space in the oven, bake the stuffing while the turkey roasts. Otherwise, bake it in the morning, and reheat it while the turkey stands. Preparation Preheat oven to 400°. Trim crust from bread. Cut bread into 1 1/2-inch cubes. Arrange bread cubes in a single layer on 2 jelly-roll pans. Bake at 400° for 10 minutes or until toasted. Reduce oven temperature to 350°. Cook sausage in a large nonstick skillet over medium-high heat 10 minutes, browning on all sides. Remove from pan; cut crosswise into 1/4-inch-thick slices. Melt butter in skillet over medium-high heat. Add mushrooms; sauté 4 minutes. Combine bread cubes, sausage, and mushrooms in a large bowl. Heat skillet over medium-high heat. Coat pan with cooking spray. Add onion, carrot, and celery; sauté 5 minutes or until lightly browned. Add parsley, thyme, sage, salt, and pepper; sauté 1 minute. Add to bread mixture. These are made with an instant stuffing mix, but, if you have leftover stuffing from your holiday meal, you can use that, instead. Ingredients: ½ stick butter or margarine, melted 1 ½ cups chicken broth + 2 additional cups chicken broth 6 oz. package instant stuffing (I used Kraft Stove Top Stuffing Mix—Pork flavor.) 1 teaspoon rubbed sage 2 thick-cut boneless pork chops--about 1-inch thick (You may make as many pork chops as your amount of stuffing and size of casserole dish will allow.) salt (or use meat tenderized with no MSG) to taste cooking oil spray In a medium saucepan, mix together ½ stick butter and 1 ½ cups chicken broth. Place over medium heat, and bring to a boil. Remove from heat. Add 1 teaspoon rubbed sage to a 6 oz. package of Stove Top Stuffing Mix. Add the stuffing mix to the hot broth. Place a lid that fits the saucepan on top of the stuffing and broth mixture, and let it sit for 5 minutes. While the stuffing is resting, you can prepare your pork chops. Take a sharp knife, and make a slice most of the way through each pork chop from the outside edge, making an open pocket in each pork chop. Salt to taste. When the stuffing has rested in the covered saucepan for 5 minutes, pack as much of the stuffing into the pork chop pockets as possible. Cook and stir, until ground beef is done, and the garlic and onion are tender and clear. Drain, if there is excess fat. Stir in 1/2 of a 14-oz. bottle of ketchup, 1/2 of an 8-oz. can tomato sauce, 1 tablespoon Worcestershire sauce, a scant teaspoon salt, and 1/4 teaspoon ground black pepper. Bring mixture to a boil. Reduce heat, and simmer, uncovered, 20 minutes, stirring occasionally. Remove from heat. In the meantime, prepare 2 cups cooked white rice. Ingredients: (for 1 hamburger) 6 oz. lean ground beef instant seasoned meat tenderized, to taste (No MSG) seasoned pepper, to taste 1/4 onion, chopped and sauteed 1/2 slice Deluxe American cheese (You may substitute another type of sliced cheese, if desired.) 1 hamburger bun (I used a wheat Kaiser roll.) mayonnaise for dressing, if desired lettuce leaves, if desired tomato slices, if desired Flatten (2) 3 oz. chunks of ground beef into a 2 large, thin hamburger patties. Use meat tenderizer and seasoned pepper, to taste, on each of the top sides. Now, on one of the top sides, place a square of American cheese (1/2 of a half-slice). On top of that place a teaspoon of sauteed onions. Repeat, by placing another square on cheese and another 1/2 teaspoon of sauteed onions on top. Now, place the other large, flat hamburger patty on top of the first patty (containing the cheese), seasoned side down. Crimp the 2 patties together around the outer edge to seal them tightly into one large stuffed hamburger patty. Grill on an outdoor or kitchen grill--or you may fry these in a skillet. Drain on a paper towel, and place on a serving plate.
